Ingredients

  • 1 lb ground turkey
  • 1 tbsp olive oil
  • 1 medium yellow onion
  • 3 cloves garlic
  • 2 medium bell peppers (any color)
  • 1 medium zucchini
  • 14½ oz can diced tomatoes
  • ½ cup chicken broth
  • 1 tsp dried Italian seasoning
  • ¾ tsp salt
  • ½ tsp black pepper
  • 2 tbsp fresh parsley (optional)

Steps

  1. Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it apart with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
  2. Add chopped onion and minced garlic to the skillet with the turkey. Sauté for 3-4 minutes until the onion softens.
  3. Stir in the chopped bell peppers and zucchini. Cook for another 5-7 minutes until vegetables start to tender-crisp.
  4. Pour in the diced tomatoes (undrained) and chicken broth. Add Italian seasoning, salt, and black pepper. Stir to combine.
  5. Bring the mixture to a simmer, then reduce heat to medium-low, cover, and cook for 10 minutes, allowing flavors to meld and vegetables to fully cook.
  6. Remove lid and cook for another 2-3 minutes, if needed, to reduce liquid slightly. Taste and adjust seasonings.
  7. Garnish with fresh parsley, if desired, and serve hot.
