Ground Turkey and Vegetable Skillet
A quick and healthy one-pan meal featuring lean ground turkey and a colorful array of vegetables, perfect for a weeknight dinner.
Ingredients
- 1 lb ground turkey
- 1 tbsp olive oil
- 1 medium yellow onion
- 3 cloves garlic
- 2 medium bell peppers (any color)
- 1 medium zucchini
- 14½ oz can diced tomatoes
- ½ cup chicken broth
- 1 tsp dried Italian seasoning
- ¾ tsp salt
- ½ tsp black pepper
- 2 tbsp fresh parsley (optional)
Steps
- Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it apart with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
- Add chopped onion and minced garlic to the skillet with the turkey. Sauté for 3-4 minutes until the onion softens.
- Stir in the chopped bell peppers and zucchini. Cook for another 5-7 minutes until vegetables start to tender-crisp.
- Pour in the diced tomatoes (undrained) and chicken broth. Add Italian seasoning, salt, and black pepper. Stir to combine.
- Bring the mixture to a simmer, then reduce heat to medium-low, cover, and cook for 10 minutes, allowing flavors to meld and vegetables to fully cook.
- Remove lid and cook for another 2-3 minutes, if needed, to reduce liquid slightly. Taste and adjust seasonings.
- Garnish with fresh parsley, if desired, and serve hot.
