Ingredients

  • 1¼ lb ground turkey
  • 4 cup broccoli florets
  • 2 carrots
  • 1 bell pepper
  • 3 clove garlic
  • 1 tbsp fresh ginger
  • ⅓ cup soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 1 tbsp vegetable oil
  • 2 cup rice (optional)
  • 2 green onions (optional)
  • 1 tsp sesame seeds (optional)

Steps

  1. Prepare the vegetables: Chop broccoli into florets, slice carrots into thin rounds or matchsticks, dice bell pepper, mince garlic, and grate ginger.
  2. In a small bowl, whisk together soy sauce, sesame oil, cornstarch, and water to create the stir-fry sauce.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat. Add ground turkey and cook, breaking it apart with a spoon, until browned and cooked through. Drain any excess fat.
  4. Add broccoli, carrots, bell pepper, minced garlic, and grated ginger to the skillet with the turkey. Stir-fry for 5-7 minutes until vegetables are tender-crisp.
  5. Pour the prepared stir-fry sauce over the turkey and vegetables. Stir constantly for 1-2 minutes until the sauce thickens and coats everything.
  6. Serve immediately, optionally over cooked rice and garnished with sliced green onions and sesame seeds.
