Ground Turkey and Veggie Stir-fry
A quick and healthy stir-fry featuring lean ground turkey and a colorful array of vegetables, perfect for a weeknight meal.
Ingredients
- 1¼ lb ground turkey
- 4 cup broccoli florets
- 2 carrots
- 1 bell pepper
- 3 clove garlic
- 1 tbsp fresh ginger
- ⅓ cup soy sauce
- 1 tbsp sesame oil
- 1 tbsp cornstarch
- 2 tbsp water
- 1 tbsp vegetable oil
- 2 cup rice (optional)
- 2 green onions (optional)
- 1 tsp sesame seeds (optional)
Steps
- Prepare the vegetables: Chop broccoli into florets, slice carrots into thin rounds or matchsticks, dice bell pepper, mince garlic, and grate ginger.
- In a small bowl, whisk together soy sauce, sesame oil, cornstarch, and water to create the stir-fry sauce.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add ground turkey and cook, breaking it apart with a spoon, until browned and cooked through. Drain any excess fat.
- Add broccoli, carrots, bell pepper, minced garlic, and grated ginger to the skillet with the turkey. Stir-fry for 5-7 minutes until vegetables are tender-crisp.
- Pour the prepared stir-fry sauce over the turkey and vegetables. Stir constantly for 1-2 minutes until the sauce thickens and coats everything.
- Serve immediately, optionally over cooked rice and garnished with sliced green onions and sesame seeds.
