Ingredients

  • 1¼ lb shrimp, peeled and deveined
  • 4 cup broccoli florets
  • 2 cup carrots, sliced
  • 1 bell pepper, red, sliced
  • 1 yellow onion, sliced
  • 3 clove garlic, minced
  • 1 tbsp fresh ginger, grated
  • ¼ cup soy sauce
  • ¼ cup chicken or vegetable broth
  • 1 tbsp cornstarch
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp brown sugar
  • 2 tbsp vegetable oil
  • 4 cup cooked rice (optional)
  • 1 tbsp sesame seeds (optional)

Steps

  1. In a small bowl, whisk together soy sauce, broth, cornstarch, sesame oil, rice vinegar, and brown sugar to create the stir-fry sauce. Set aside.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add shrimp and cook for 2-3 minutes per side, until pink and opaque. Remove shrimp from skillet and set aside.
  3. Add the remaining 1 tablespoon of vegetable oil to the skillet. Add broccoli, carrots, bell pepper, and onion. Stir-fry for 5-7 minutes, until vegetables are crisp-tender.
  4. Add minced garlic and grated ginger to the vegetables and stir-fry for 1 minute until fragrant.
  5. Return the cooked shrimp to the skillet with the vegetables. Stir the prepared sauce once more and pour it over the shrimp and vegetables.
  6. Cook, stirring constantly, for 1-2 minutes, until the sauce thickens and coats the ingredients.
  7. Serve immediately over cooked rice, if desired, and garnish with sesame seeds.
