Shrimp Stir-Fry
A quick and vibrant shrimp stir-fry featuring tender shrimp and crisp vegetables in a savory sauce, perfect for a weeknight meal.
Ingredients
- 1¼ lb shrimp, peeled and deveined
- 4 cup broccoli florets
- 2 cup carrots, sliced
- 1 bell pepper, red, sliced
- 1 yellow onion, sliced
- 3 clove garlic, minced
- 1 tbsp fresh ginger, grated
- ¼ cup soy sauce
- ¼ cup chicken or vegetable broth
- 1 tbsp cornstarch
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tbsp brown sugar
- 2 tbsp vegetable oil
- 4 cup cooked rice (optional)
- 1 tbsp sesame seeds (optional)
Steps
- In a small bowl, whisk together soy sauce, broth, cornstarch, sesame oil, rice vinegar, and brown sugar to create the stir-fry sauce. Set aside.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add shrimp and cook for 2-3 minutes per side, until pink and opaque. Remove shrimp from skillet and set aside.
- Add the remaining 1 tablespoon of vegetable oil to the skillet. Add broccoli, carrots, bell pepper, and onion. Stir-fry for 5-7 minutes, until vegetables are crisp-tender.
- Add minced garlic and grated ginger to the vegetables and stir-fry for 1 minute until fragrant.
- Return the cooked shrimp to the skillet with the vegetables. Stir the prepared sauce once more and pour it over the shrimp and vegetables.
- Cook, stirring constantly, for 1-2 minutes, until the sauce thickens and coats the ingredients.
- Serve immediately over cooked rice, if desired, and garnish with sesame seeds.
