Ground Turkey Stuffed Bell Peppers
Hearty bell peppers filled with seasoned ground turkey, rice, and cheese, then baked until tender.
Ingredients
- 4 bell peppers
- 1 lb ground turkey
- 1 medium onion
- 2 clove garlic
- 1 cup cooked rice
- 15 oz canned diced tomatoes
- 8 oz tomato sauce
- 1 cup shredded cheddar cheese
- 1 tbsp olive oil
- 1 tsp Italian seasoning
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp fresh parsley (optional)
Steps
- Preheat oven to 375°F (190°C). Halve the bell peppers lengthwise and remove seeds and membranes. Place cut-side up in a baking dish.
- Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until softened, about 5 minutes. Add minced garlic and cook for 1 minute more.
- Add ground turkey to the skillet and cook, breaking it apart with a spoon, until browned. Drain any excess fat.
- Stir in cooked rice, diced tomatoes (undrained), half of the tomato sauce, Italian seasoning, salt, and pepper. Mix well.
- Spoon the turkey mixture evenly into the bell pepper halves. Pour the remaining tomato sauce around the peppers in the baking dish.
- Bake for 30 minutes. Remove from oven, sprinkle shredded cheddar cheese over the top of each pepper, and return to the oven for another 10-15 minutes, or until cheese is melted and bubbly and peppers are tender.
- Garnish with fresh parsley if desired and serve hot.
