Ground Turkey Stuffed Bell Peppers

Hearty bell peppers filled with seasoned ground turkey, rice, and cheese, then baked until tender.

Ingredients

  • 4 bell peppers
  • 1 lb ground turkey
  • 1 medium onion
  • 2 clove garlic
  • 1 cup cooked rice
  • 15 oz canned diced tomatoes
  • 8 oz tomato sauce
  • 1 cup shredded cheddar cheese
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp fresh parsley (optional)

Steps

  1. Preheat oven to 375°F (190°C). Halve the bell peppers lengthwise and remove seeds and membranes. Place cut-side up in a baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until softened, about 5 minutes. Add minced garlic and cook for 1 minute more.
  3. Add ground turkey to the skillet and cook, breaking it apart with a spoon, until browned. Drain any excess fat.
  4. Stir in cooked rice, diced tomatoes (undrained), half of the tomato sauce, Italian seasoning, salt, and pepper. Mix well.
  5. Spoon the turkey mixture evenly into the bell pepper halves. Pour the remaining tomato sauce around the peppers in the baking dish.
  6. Bake for 30 minutes. Remove from oven, sprinkle shredded cheddar cheese over the top of each pepper, and return to the oven for another 10-15 minutes, or until cheese is melted and bubbly and peppers are tender.
  7. Garnish with fresh parsley if desired and serve hot.
