Halibut Cheeks with Lemon Butter Sauce

Tender halibut cheeks pan-seared to perfection and bathed in a bright, tangy lemon butter sauce.

Ingredients

  • 1½ lb halibut cheeks
  • ½ cup unsalted butter
  • 2 lemon
  • ¼ cup fresh parsley (optional)
  • 3 clove garlic
  • ¼ cup all-purpose flour
  • 2 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper

Steps

  1. Pat halibut cheeks dry with paper towels. Season with salt and pepper, then dredge lightly in flour, shaking off excess.
  2. Melt 2 tablespoons of olive oil and 2 tablespoons of butter in a large skillet over medium-high heat.
  3. Sear halibut cheeks for 3-4 minutes per side, until golden brown and cooked through. Remove fish from skillet and set aside.
  4. Reduce heat to medium. Add remaining butter to the skillet. Once melted, add minced garlic and cook for 1 minute until fragrant.
  5. Stir in the juice of 2 lemons. Bring to a gentle simmer and cook for 2-3 minutes, scraping up any browned bits from the bottom of the pan.
  6. Return halibut cheeks to the skillet, spooning the lemon butter sauce over them. Garnish with fresh parsley, if desired, and serve immediately.
