Halibut with Lemon-Dill Sauce
Flaky halibut fillets pan-seared to perfection, topped with a bright and creamy lemon-dill sauce.
Ingredients
- 1½ lb halibut fillets
- 4 tbsp unsalted butter
- 2 tbsp all-purpose flour (optional)
- ½ cup chicken broth
- ½ cup heavy cream
- 1 lemon, juiced
- 2 tbsp fresh dill, chopped
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp olive oil
Steps
- Pat halibut fillets dry with paper towels and season generously with salt and pepper.
- Heat olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Sear halibut for 3-5 minutes per side, until golden brown and cooked through. Remove fish from skillet and set aside.
- In the same skillet, melt the remaining 2 tablespoons of butter. If thickening, whisk in flour and cook for 1 minute. Gradually whisk in chicken broth and heavy cream, bringing to a simmer.
- Stir in lemon juice and fresh dill. Season the sauce with additional salt and pepper to taste.
- Return halibut to the skillet, spooning the sauce over the fish. Serve immediately.
