Halibut with Lemon-Dill Sauce

Ingredients

  • 1½ lb halibut fillets
  • 4 tbsp unsalted butter
  • 2 tbsp all-purpose flour (optional)
  • ½ cup chicken broth
  • ½ cup heavy cream
  • 1 lemon, juiced
  • 2 tbsp fresh dill, chopped
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil

Steps

  1. Pat halibut fillets dry with paper towels and season generously with salt and pepper.
  2. Heat olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Sear halibut for 3-5 minutes per side, until golden brown and cooked through. Remove fish from skillet and set aside.
  3. In the same skillet, melt the remaining 2 tablespoons of butter. If thickening, whisk in flour and cook for 1 minute. Gradually whisk in chicken broth and heavy cream, bringing to a simmer.
  4. Stir in lemon juice and fresh dill. Season the sauce with additional salt and pepper to taste.
  5. Return halibut to the skillet, spooning the sauce over the fish. Serve immediately.
