Ingredients

  • 1 lb ground beef
  • ½ yellow onion
  • 2 clove garlic
  • 8 oz elbow macaroni
  • 3 cup beef broth
  • ½ cup milk
  • 2 tbsp tomato paste
  • 1 cup cheddar cheese, shredded
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika
  • 1 tbsp vegetable oil (optional)

Steps

  1. In a large skillet or Dutch oven, brown the ground beef over medium-high heat. Drain any excess grease and set the beef aside.
  2. Add a tablespoon of oil if needed, then sauté the diced onion in the same skillet until softened, about 3-5 minutes. Add minced garlic and cook for another minute until fragrant.
  3. Stir in the tomato paste, salt, pepper, garlic powder, onion powder, and paprika, cooking for 1 minute.
  4. Return the cooked ground beef to the skillet. Add the elbow macaroni, beef broth, and milk. Stir well to combine.
  5. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 10-12 minutes, or until the pasta is tender and most of the liquid has been absorbed, stirring occasionally.
  6. Remove from heat and stir in the shredded cheddar cheese until melted and creamy. Serve hot.
