Hearty Cabbage Soup

Ingredients

  • 1½ lb green cabbage
  • 2 medium carrots
  • 2 celery stalks
  • 1 medium yellow onion
  • 3 garlic cloves
  • 14½ oz canned diced tomatoes
  • 6 cup vegetable broth
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • 1 bay leaf
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp fresh parsley (optional)

Steps

  1. Chop the cabbage into 1-inch pieces. Dice carrots, celery, and onion. Mince the garlic.
  2. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery; cook until softened, about 5-7 minutes.
  3. Stir in minced garlic, oregano, and thyme. Cook for 1 minute until fragrant.
  4. Add diced tomatoes (undrained), vegetable broth, bay leaf, salt, and pepper to the pot. Bring to a boil.
  5. Add the chopped cabbage to the pot. Reduce heat to low, cover, and simmer for 25-30 minutes, or until cabbage is tender.
  6. Remove the bay leaf before serving. Taste and adjust seasoning as needed.
  7. Ladle the hot soup into bowls. Garnish with fresh parsley, if desired.
