Hearty Cabbage Soup
A comforting and budget-friendly soup packed with vegetables and tender cabbage, perfect for a light yet satisfying meal.
Ingredients
- 1½ lb green cabbage
- 2 medium carrots
- 2 celery stalks
- 1 medium yellow onion
- 3 garlic cloves
- 14½ oz canned diced tomatoes
- 6 cup vegetable broth
- 2 tbsp olive oil
- 1 tsp dried oregano
- ½ tsp dried thyme
- 1 bay leaf
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp fresh parsley (optional)
Steps
- Chop the cabbage into 1-inch pieces. Dice carrots, celery, and onion. Mince the garlic.
- Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery; cook until softened, about 5-7 minutes.
- Stir in minced garlic, oregano, and thyme. Cook for 1 minute until fragrant.
- Add diced tomatoes (undrained), vegetable broth, bay leaf, salt, and pepper to the pot. Bring to a boil.
- Add the chopped cabbage to the pot. Reduce heat to low, cover, and simmer for 25-30 minutes, or until cabbage is tender.
- Remove the bay leaf before serving. Taste and adjust seasoning as needed.
- Ladle the hot soup into bowls. Garnish with fresh parsley, if desired.
