Hearty Turkey Chili

Ingredients

  • 1 lb ground turkey
  • 1 yellow onion
  • 3 garlic cloves
  • 1 bell pepper
  • 28 oz diced tomatoes
  • 15 oz kidney beans
  • 15 oz black beans
  • 2 tbsp tomato paste
  • 1 cup chicken broth
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 tsp smoked paprika
  • ½ tsp oregano
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbsp olive oil
  • ½ cup shredded cheddar cheese (optional)
  • ¼ cup sour cream (optional)
  • ¼ cup fresh cilantro (optional)

Steps

  1. Dice the onion and bell pepper, and mince the garlic.
  2. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess fat.
  3. Add onion, bell pepper, and garlic to the pot. Sauté until vegetables are softened, about 5-7 minutes.
  4. Stir in tomato paste, chili powder, cumin, smoked paprika, oregano, salt, and pepper. Cook for 1 minute, stirring constantly, until fragrant.
  5. Add diced tomatoes (undrained), rinsed and drained kidney beans, rinsed and drained black beans, and chicken broth. Bring to a simmer.
  6. Reduce heat to low, cover, and let the chili simmer for at least 20-30 minutes, stirring occasionally, to allow flavors to meld.
  7. Taste and adjust seasonings as needed. Serve hot, garnished with shredded cheese, sour cream, or fresh cilantro, if desired.
