Italian Beef Sandwich with Au Jus
A classic Chicago-style Italian beef sandwich featuring thinly sliced, seasoned roast beef piled high on a crusty roll, dipped in savory au jus.
Ingredients
- 2½ lb Chuck roast
- 4 cup Beef broth
- 2 tbsp Worcestershire sauce
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 1 tsp Dried oregano
- ½ tsp Dried basil
- ½ tsp Red pepper flakes (optional)
- 1 tsp Salt
- ½ tsp Black pepper
- 4 Crusty Italian rolls
- ½ cup Giardiniera (optional)
Steps
- Trim excess fat from the chuck roast and cut it into 2-3 large pieces. Season generously with salt and pepper.
- Combine beef broth, Worcestershire sauce, garlic powder, onion powder, oregano, basil, and red pepper flakes (if using) in a slow cooker. Add the seasoned beef.
- Cook on low for 6-8 hours or on high for 3-4 hours, until the beef is fork-tender.
- Remove the beef from the slow cooker and shred or thinly slice against the grain. Return the beef to the slow cooker with the cooking liquid (au jus) to keep warm and moist.
- Split the Italian rolls lengthwise. You can toast them lightly if desired.
- Pile a generous amount of the thinly sliced beef onto each roll. Spoon extra au jus over the beef.
- Serve immediately with a side of au jus for dipping and giardiniera (if using).
