Italian Sub Sandwiches

A classic Italian-American sub packed with an assortment of cured meats, provolone cheese, and crisp vegetables, all drizzled with a zesty vinaigrette.

Ingredients

  • 4 crusty sub rolls
  • 8 slice provolone cheese
  • 8 slice genoa salami
  • 8 slice capicola
  • 8 slice pepperoni
  • 8 slice ham
  • 2 cup shredded lettuce
  • 1 tomato
  • ½ red onion
  • ½ cup banana peppers (optional)
  • 4 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper

Steps

  1. Slice sub rolls lengthwise, but not all the way through, to create a pocket.
  2. Layer 2 slices of provolone cheese into each roll.
  3. Arrange 2 slices each of salami, capicola, pepperoni, and ham on top of the cheese.
  4. Top the meats with shredded lettuce, sliced tomato, and thinly sliced red onion. Add banana peppers if desired.
  5. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper to make the vinaigrette.
  6. Drizzle the vinaigrette generously over the fillings in each sub.
  7. Close the subs and serve immediately.
