Kielbasa and Cabbage Skillet

Ingredients

  • 14 oz Smoked Kielbasa Sausage
  • 1 head Green Cabbage
  • 1 Yellow Onion
  • 1½ lb Potatoes
  • 2 clove Garlic
  • 2 tbsp Olive Oil
  • 1 tbsp Apple Cider Vinegar (optional)
  • ½ tsp Salt
  • ¼ tsp Black Pepper
  • 2 tbsp Fresh Parsley (optional)

Steps

  1. Slice the kielbasa into 1/2-inch thick rounds. Quarter the cabbage and slice into 1/2-inch ribbons. Dice the onion and potatoes into 1/2-inch pieces. Mince the garlic.
  2. Heat olive oil in a large skillet over medium-high heat. Add kielbasa and cook until browned, about 5-7 minutes. Remove kielbasa and set aside, leaving rendered fat in the skillet.
  3. Add potatoes and onion to the skillet. Cook, stirring occasionally, until potatoes begin to soften and brown, about 8-10 minutes.
  4. Stir in the cabbage and garlic. Cook, stirring frequently, until cabbage wilts and becomes tender, about 5-7 minutes.
  5. Return the kielbasa to the skillet. Add salt and pepper, and apple cider vinegar if using. Stir to combine and heat through for 2-3 minutes.
  6. Garnish with fresh parsley, if desired, and serve immediately.
