Ingredients

  • 14 oz smoked kielbasa sausage
  • 1½ lb Yukon Gold potatoes
  • 2 bell peppers (any color)
  • 1 yellow onion
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp dried oregano
  • ¾ tsp salt
  • ½ tsp black pepper
  • 2 tbsp fresh parsley (optional)

Steps

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easier cleanup.
  2. Slice the kielbasa into 1/2-inch thick rounds. Cut potatoes into 1-inch cubes. Core and chop bell peppers into 1-inch pieces. Chop the onion into similar 1-inch pieces.
  3. In a large bowl, combine the sliced kielbasa, potatoes, bell peppers, and onion. Drizzle with olive oil, then sprinkle with garlic powder, paprika, oregano, salt, and black pepper. Toss well to ensure everything is evenly coated.
  4. Spread the mixture in a single layer on the prepared baking sheet.
  5. Bake for 25-35 minutes, or until potatoes are tender and lightly browned, stirring halfway through to ensure even cooking.
  6. Garnish with fresh parsley, if desired, and serve hot.
