Kielbasa and Potato Hash
A hearty and comforting skillet dish featuring savory kielbasa sausage, crispy potatoes, and tender onions, perfect for breakfast or dinner.
Ingredients
- 14 oz Kielbasa sausage
- 1½ lb Russet potatoes
- 1 Yellow onion
- 1 Bell pepper (any color) (optional)
- 2 tbsp Olive oil
- ½ tsp Salt
- ¼ tsp Black pepper
- ½ tsp Garlic powder (optional)
- 2 tbsp Fresh parsley (optional)
Steps
- Dice the kielbasa into 1/2-inch pieces. Peel and dice the potatoes into 1/2-inch cubes. Dice the onion and bell pepper (if using).
- Heat olive oil in a large skillet or cast-iron pan over medium-high heat. Add the diced potatoes and cook, stirring occasionally, for 10-12 minutes until browned and tender.
- Add the diced kielbasa to the skillet with the potatoes and cook for 5-7 minutes, stirring, until the kielbasa is lightly browned.
- Stir in the diced onion and bell pepper (if using), salt, black pepper, and garlic powder (if using). Cook for another 5-7 minutes, until the onions are softened and translucent.
- Serve hot, garnished with fresh parsley if desired.
