Ingredients

  • 14 oz Kielbasa sausage
  • 1½ lb Russet potatoes
  • 1 Yellow onion
  • 1 Bell pepper (any color) (optional)
  • 2 tbsp Olive oil
  • ½ tsp Salt
  • ¼ tsp Black pepper
  • ½ tsp Garlic powder (optional)
  • 2 tbsp Fresh parsley (optional)

Steps

  1. Dice the kielbasa into 1/2-inch pieces. Peel and dice the potatoes into 1/2-inch cubes. Dice the onion and bell pepper (if using).
  2. Heat olive oil in a large skillet or cast-iron pan over medium-high heat. Add the diced potatoes and cook, stirring occasionally, for 10-12 minutes until browned and tender.
  3. Add the diced kielbasa to the skillet with the potatoes and cook for 5-7 minutes, stirring, until the kielbasa is lightly browned.
  4. Stir in the diced onion and bell pepper (if using), salt, black pepper, and garlic powder (if using). Cook for another 5-7 minutes, until the onions are softened and translucent.
  5. Serve hot, garnished with fresh parsley if desired.
