Lamb Chops with Mint Sauce

Ingredients
- 1½ lb lamb loin chops
- 1 cup fresh mint leaves
- ¼ cup white wine vinegar
- 2 tbsp granulated sugar
- 2 clove garlic
- 2 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
Steps
- Finely chop the fresh mint leaves and mince the garlic.
- Prepare the mint sauce: In a small bowl, combine the chopped mint, minced garlic, white wine vinegar, and sugar. Stir well and set aside.
- Season the lamb chops generously with salt and black pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat until shimmering.
- Sear the lamb chops for 3-5 minutes per side for medium-rare, or longer for desired doneness. Remove chops from skillet and let rest for 5 minutes.
