Lemon Chicken

Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • 2 lemon
  • 4 clove garlic
  • ¾ cup chicken broth
  • 2 tbsp all-purpose flour
  • 2 tbsp olive oil
  • ¼ cup fresh parsley (optional)
  • 1 tsp salt
  • ½ tsp black pepper

Steps

  1. Slice chicken breasts horizontally to create thinner cutlets, then season with salt and pepper.
  2. Dredge chicken cutlets lightly in flour, shaking off any excess.
  3. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown and cooked through. Remove chicken from skillet and set aside.
  4. In the same skillet, add minced garlic and cook for 30 seconds until fragrant. Deglaze with chicken broth, scraping up any browned bits from the bottom of the pan.
  5. Add the juice of two lemons to the skillet and bring the sauce to a simmer, cooking for 2-3 minutes until slightly thickened.
  6. Return the cooked chicken to the skillet, coating it in the lemon-garlic sauce. Garnish with fresh parsley if desired and serve immediately.
