Lemon Chicken
Bright and flavorful, this Lemon Chicken features tender chicken breasts pan-seared and coated in a tangy lemon-garlic sauce.
Ingredients
- 1½ lb boneless, skinless chicken breasts
- 2 lemon
- 4 clove garlic
- ¾ cup chicken broth
- 2 tbsp all-purpose flour
- 2 tbsp olive oil
- ¼ cup fresh parsley (optional)
- 1 tsp salt
- ½ tsp black pepper
Steps
- Slice chicken breasts horizontally to create thinner cutlets, then season with salt and pepper.
- Dredge chicken cutlets lightly in flour, shaking off any excess.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown and cooked through. Remove chicken from skillet and set aside.
- In the same skillet, add minced garlic and cook for 30 seconds until fragrant. Deglaze with chicken broth, scraping up any browned bits from the bottom of the pan.
- Add the juice of two lemons to the skillet and bring the sauce to a simmer, cooking for 2-3 minutes until slightly thickened.
- Return the cooked chicken to the skillet, coating it in the lemon-garlic sauce. Garnish with fresh parsley if desired and serve immediately.
