Ingredients

  • 1½ lb cod fillets
  • 1 lemon
  • ¼ cup fresh parsley
  • 2 tbsp fresh dill
  • 2 clove garlic
  • 2 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • 4 lemon slices (optional)

Steps

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Pat cod fillets dry with paper towels. Season both sides with salt and pepper.
  3. In a small bowl, whisk together olive oil, the juice of one lemon, minced garlic, chopped parsley, and chopped dill.
  4. Place cod fillets on the prepared baking sheet. Pour the lemon-herb mixture evenly over the cod.
  5. Bake for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.
  6. Serve immediately, garnished with fresh lemon slices if desired.
