Lemon Herb Baked Cod
Flaky cod fillets baked with bright lemon, fresh herbs, and a touch of garlic for a light and healthy meal.
Ingredients
- 1½ lb cod fillets
- 1 lemon
- ¼ cup fresh parsley
- 2 tbsp fresh dill
- 2 clove garlic
- 2 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
- 4 lemon slices (optional)
Steps
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Pat cod fillets dry with paper towels. Season both sides with salt and pepper.
- In a small bowl, whisk together olive oil, the juice of one lemon, minced garlic, chopped parsley, and chopped dill.
- Place cod fillets on the prepared baking sheet. Pour the lemon-herb mixture evenly over the cod.
- Bake for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.
- Serve immediately, garnished with fresh lemon slices if desired.
