Lemon Herb Salmon

Ingredients

  • 1½ lb salmon fillets
  • 2 lemon
  • ¼ cup fresh parsley
  • 2 tbsp fresh dill
  • 3 clove garlic
  • 3 tbsp olive oil
  • ¾ tsp salt
  • ½ tsp black pepper

Steps

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Pat salmon fillets dry. Mince garlic, chop parsley and dill. Slice one lemon into thin rounds, and halve the other for juice.
  3. In a small bowl, whisk together olive oil, minced garlic, chopped parsley, chopped dill, the juice of half a lemon, salt, and pepper.
  4. Place salmon fillets on the prepared baking sheet. Spoon the herb mixture evenly over each fillet.
  5. Arrange lemon slices on top of the salmon fillets.
  6. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
