Ingredients

  • 1½ lb boneless, skinless chicken thighs
  • 2 lemongrass stalks
  • 4 garlic cloves
  • 1 shallot
  • 3 tbsp fish sauce
  • 1 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 lime
  • ½ tsp chili flakes (optional)
  • ½ tsp black pepper
  • 2 tbsp vegetable oil
  • ¼ cup fresh cilantro (optional)
  • 3 cup cooked rice (optional)

Steps

  1. Trim the tough outer layers from the lemongrass stalks, then finely mince the tender inner core. Mince the garlic and shallot.
  2. Cut chicken thighs into 1-inch pieces. In a bowl, combine minced lemongrass, garlic, shallot, fish sauce, soy sauce, brown sugar, chili flakes (if using), and black pepper. Add the chicken and toss to coat. Marinate for at least 20 minutes.
  3. Heat vegetable oil in a large skillet over medium-high heat. Add the marinated chicken in a single layer, working in batches if necessary to avoid overcrowding.
  4. Cook chicken for 4-6 minutes per side, until deeply golden brown and cooked through. Squeeze fresh lime juice over the cooked chicken.
  5. Garnish with fresh cilantro, if desired. Serve immediately with cooked rice.
