Mac & Cheese with Peas
A comforting classic, this creamy mac and cheese is made even better with the addition of sweet green peas for a touch of freshness.
Ingredients
- 8 oz elbow macaroni
- 4 tbsp butter
- 4 tbsp all-purpose flour
- 2½ cup milk
- 2 cup sharp cheddar cheese
- 1 cup frozen peas
- ½ tsp salt
- ¼ tsp black pepper
- ⅛ tsp nutmeg (optional)
Steps
- Cook macaroni according to package directions until al dente. Drain and set aside.
- In a large saucepan or pot, melt butter over medium heat. Whisk in flour and cook for 1 minute to create a roux.
- Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly, until the sauce thickens.
- Remove from heat and stir in shredded cheddar cheese, salt, pepper, and nutmeg (if using) until cheese is fully melted and sauce is smooth.
- Add the cooked macaroni and frozen peas to the cheese sauce. Stir gently to combine.
- Heat over low heat for 2-3 minutes, or until peas are heated through and the dish is warmed.
