Maple Glazed Pork Tenderloin

Ingredients

  • 1½ lb pork tenderloin
  • ½ cup maple syrup
  • 2 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil
  • 2 tbsp fresh parsley (optional)

Steps

  1. Preheat oven to 400°F (200°C). Pat pork tenderloin dry with paper towels.
  2. In a small bowl, whisk together maple syrup, Dijon mustard, apple cider vinegar, garlic powder, onion powder, salt, and pepper to make the glaze.
  3. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the pork tenderloin for 2-3 minutes per side until browned.
  4. Brush half of the maple glaze over the seared pork. Transfer the skillet to the preheated oven.
  5. Roast for 15-20 minutes, or until an internal temperature of 145°F (63°C) is reached. Halfway through roasting, brush with the remaining glaze.
  6. Remove from oven, tent with foil, and let rest for 5-10 minutes before slicing. Garnish with fresh parsley, if desired.
