Moroccan Chicken Couscous
A fragrant and hearty Moroccan dish featuring tender chicken, sweet apricots, and chickpeas, all infused with harissa spice and served over fluffy couscous.
Ingredients
- 1 tbsp olive oil
- 1 onion
- 0.9 lb chicken breast
- ½ tsp ginger
- 2 tbsp harissa spice
- 10 dried apricots
- 15 oz chickpeas
- 1½ cup couscous
- 1½ cup chicken broth
- ¼ cup fresh cilantro (optional)
- 1 tbsp harissa (optional)
Steps
- Heat olive oil in a large frying pan over medium heat. Add chopped onion and cook for 2-3 minutes until softened.
- Add chicken breast to the pan and cook for 7-10 minutes, stirring occasionally, until cooked through and onions are golden.
- Grate ginger into the pan, stir in harissa spice, and cook for 1 minute more until fragrant.
- Stir in dried apricots, chickpeas, and couscous. Pour chicken broth over the mixture and stir once.
- Cover the pan with a lid or foil and let it sit for about 5 minutes, or until the couscous has absorbed all the stock and is soft.
- Fluff the couscous with a fork. Garnish with fresh cilantro and serve immediately, with extra harissa if desired.
