Ingredients

  • ½ cup tahini
  • 1 lemon
  • 2 tbsp olive oil
  • 1 red onion
  • 1 clove garlic
  • 1 yellow bell pepper
  • 8 oz green beans
  • 1 zucchini
  • 4 oz kale
  • 10 oz cooked lentils
  • 1 pinch salt
  • ¼ cup water

Steps

  1. In a jug, whisk together tahini, lemon zest, lemon juice, and 1/4 cup cold water until a runny dressing forms. Season with salt to taste and set aside.
  2. Heat olive oil in a large wok or frying pan over medium-high heat. Add chopped red onion and a pinch of salt, frying for 2 minutes until softened.
  3. Stir in crushed garlic, thinly sliced yellow pepper, green beans, and sliced zucchini. Cook for 5 minutes, stirring frequently.
  4. Add shredded kale and cooked lentils to the pan. Pour in the tahini dressing.
  5. Continue cooking for 2 minutes, stirring until the kale is wilted and all ingredients are coated in the creamy dressing.
  6. Serve immediately.
