Tahini Lentils
A vibrant and healthy Moroccan-inspired dish featuring tender lentils, crisp vegetables, and a creamy lemon-tahini dressing.
Ingredients
- ½ cup tahini
- 1 lemon
- 2 tbsp olive oil
- 1 red onion
- 1 clove garlic
- 1 yellow bell pepper
- 8 oz green beans
- 1 zucchini
- 4 oz kale
- 10 oz cooked lentils
- 1 pinch salt
- ¼ cup water
Steps
- In a jug, whisk together tahini, lemon zest, lemon juice, and 1/4 cup cold water until a runny dressing forms. Season with salt to taste and set aside.
- Heat olive oil in a large wok or frying pan over medium-high heat. Add chopped red onion and a pinch of salt, frying for 2 minutes until softened.
- Stir in crushed garlic, thinly sliced yellow pepper, green beans, and sliced zucchini. Cook for 5 minutes, stirring frequently.
- Add shredded kale and cooked lentils to the pan. Pour in the tahini dressing.
- Continue cooking for 2 minutes, stirring until the kale is wilted and all ingredients are coated in the creamy dressing.
- Serve immediately.
