Ingredients

  • 1 loaf round Italian bread
  • 1 cup pitted green olives
  • ½ cup pitted Kalamata olives
  • 1 stalk celery
  • ½ red bell pepper
  • 2 cloves garlic
  • 2 tbsp capers
  • 2 tbsp red wine vinegar
  • ⅓ cup extra virgin olive oil
  • ½ tsp dried oregano
  • ¼ tsp black pepper
  • 4 oz sliced genoa salami
  • 4 oz sliced mortadella
  • 4 oz sliced ham
  • 4 oz sliced provolone cheese
  • 4 oz sliced mozzarella cheese

Steps

  1. Finely chop green olives, Kalamata olives, celery, red bell pepper, and garlic. Combine in a bowl with capers, red wine vinegar, olive oil, oregano, and black pepper. Mix well to create the olive salad.
  2. Slice the round Italian bread horizontally through the middle, creating a top and bottom half. Scoop out a little of the soft bread from both halves to create more space for fillings.
  3. Spread a generous layer of the olive salad on the bottom half of the bread. Press it down lightly.
  4. Layer the sliced provolone cheese over the olive salad, followed by the sliced ham, mortadella, and salami.
  5. Place the sliced mozzarella cheese on top of the meats. Spread another layer of olive salad on the underside of the top bread half.
  6. Place the top half of the bread onto the sandwich. Wrap the entire sandwich tightly in plastic wrap and refrigerate for at least 30 minutes, or up to 4 hours, allowing the flavors to meld.
  7. To serve, unwrap the sandwich and cut it into four wedges.
