One-Pan Ground Beef and Rice
A hearty and convenient one-pan meal featuring seasoned ground beef, rice, and vegetables, perfect for a weeknight dinner.
Ingredients
- 1 lb ground beef, 80/20
- 1 medium yellow onion
- 2 cloves garlic
- 1 medium bell pepper
- 1½ cup long-grain white rice
- 2½ cup beef broth
- 14½ oz can diced tomatoes
- 1 tsp chili powder
- ½ tsp cumin
- ½ tsp paprika
- ¾ tsp salt
- ¼ tsp black pepper
- 1 tbsp olive oil
- 2 tbsp fresh parsley, chopped (optional)
- ½ cup shredded cheddar cheese (optional)
Steps
- Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add ground beef and cook, breaking it apart with a spoon, until browned. Drain any excess fat.
- Add chopped onion, minced garlic, and diced bell pepper to the skillet. Cook for 5-7 minutes until vegetables soften.
- Stir in chili powder, cumin, paprika, salt, and black pepper. Cook for 1 minute until fragrant.
- Add uncooked rice, beef broth, and undrained diced tomatoes to the skillet. Stir to combine.
- Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is tender and liquid is absorbed.
- Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork.
- Garnish with fresh parsley and shredded cheddar cheese, if desired, before serving.
