One-Pan Ground Beef and Rice

Ingredients

  • 1 lb ground beef, 80/20
  • 1 medium yellow onion
  • 2 cloves garlic
  • 1 medium bell pepper
  • 1½ cup long-grain white rice
  • 2½ cup beef broth
  • 14½ oz can diced tomatoes
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ tsp paprika
  • ¾ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil
  • 2 tbsp fresh parsley, chopped (optional)
  • ½ cup shredded cheddar cheese (optional)

Steps

  1. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add ground beef and cook, breaking it apart with a spoon, until browned. Drain any excess fat.
  2. Add chopped onion, minced garlic, and diced bell pepper to the skillet. Cook for 5-7 minutes until vegetables soften.
  3. Stir in chili powder, cumin, paprika, salt, and black pepper. Cook for 1 minute until fragrant.
  4. Add uncooked rice, beef broth, and undrained diced tomatoes to the skillet. Stir to combine.
  5. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is tender and liquid is absorbed.
  6. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork.
  7. Garnish with fresh parsley and shredded cheddar cheese, if desired, before serving.
