One-Pot Goulash

  • 1 lb ground beef
  • 1 medium yellow onion
  • 3 cloves garlic
  • 2 cups elbow macaroni
  • 28 oz crushed tomatoes
  • 3 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup cheddar cheese, shredded (optional)
  • 2 tbsp fresh parsley, chopped (optional)

Steps

  1. Brown the ground beef in a large pot or Dutch oven over medium-high heat, breaking it apart with a spoon. Drain any excess grease.
  2. Add the chopped onion and minced garlic to the pot with the beef. Cook until the onion softens, about 5-7 minutes.
  3. Stir in the crushed tomatoes, beef broth, Worcestershire sauce, Italian seasoning, salt, and pepper. Bring the mixture to a simmer.
  4. Add the elbow macaroni to the pot, stirring to ensure it's fully submerged. Cover and reduce heat to medium-low.
  5. Cook for 12-15 minutes, or until the pasta is tender and most of the liquid has been absorbed, stirring occasionally to prevent sticking.
  6. Remove from heat and let stand for a few minutes. If desired, stir in shredded cheddar cheese until melted and garnish with fresh parsley before serving.
