One-Pot Ground Beef and Pasta

Ingredients

  • 1 lb ground beef
  • 1 medium onion
  • 2 clove garlic
  • 14½ oz canned diced tomatoes
  • 15 oz tomato sauce
  • 3 cup beef broth
  • 8 oz elbow macaroni
  • 1 tsp dried Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup shredded cheddar cheese (optional)
  • 2 tbsp fresh parsley (optional)

Steps

  1. Brown the ground beef in a large pot or Dutch oven over medium-high heat, breaking it apart with a spoon. Drain any excess fat.
  2. Add the chopped onion and minced garlic to the pot with the beef. Cook until the onion is softened, about 5 minutes.
  3. Stir in the diced tomatoes, tomato sauce, beef broth, elbow macaroni, Italian seasoning, salt, and pepper. Bring the mixture to a boil.
  4. Reduce heat to medium-low, cover, and simmer for 10-12 minutes, or until the pasta is al dente and most of the liquid has been absorbed, stirring occasionally.
  5. Remove from heat and let stand for a few minutes. If desired, stir in shredded cheddar cheese until melted.
  6. Garnish with fresh parsley, if using, and serve hot.
