Ingredients

  • 1½ lb halibut fillets
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 lemon
  • ¼ cup fresh parsley (optional)
  • ¾ tsp salt
  • ½ tsp black pepper

Steps

  1. Pat halibut fillets dry with paper towels and season generously with salt and pepper on both sides.
  2. Heat olive oil in a large non-stick skillet over medium-high heat until shimmering.
  3. Carefully place halibut fillets in the hot skillet. Sear for 3-5 minutes per side, depending on thickness, until golden brown and cooked through.
  4. During the last minute of cooking, add butter to the skillet. Once melted, spoon the butter over the fillets to baste.
  5. Remove halibut from the skillet and transfer to plates. Squeeze fresh lemon juice over each fillet.
  6. Garnish with chopped fresh parsley, if desired, and serve immediately.
