Pan-Seared Halibut with Asparagus

Ingredients
- 1½ lb halibut fillets
- 1 lb asparagus
- 1 lemon
- 2 tbsp olive oil
- ½ tsp garlic powder
- ¾ tsp salt
- ½ tsp black pepper
- 2 tbsp fresh parsley (optional)
Steps
- Pat halibut fillets dry with paper towels and season evenly with salt, pepper, and garlic powder.
- Trim the woody ends off the asparagus spears.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the asparagus and cook for 5-7 minutes, stirring occasionally, until tender-crisp. Remove from skillet and set aside.
- Add the remaining 1 tablespoon of olive oil to the same skillet. Once hot, carefully place the halibut fillets in the skillet.
- Sear the halibut for 3-5 minutes per side, depending on thickness, until golden brown and cooked through (internal temperature of 145°F/63°C).
- Serve the pan-seared halibut immediately with the cooked asparagus. Squeeze fresh lemon juice over the top and garnish with fresh parsley, if desired.
