Ingredients

  • 4 boneless pork chops
  • ¾ tsp salt
  • ½ tsp black pepper
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 yellow onion
  • 2 Gala apples
  • 1 tbsp apple cider vinegar
  • 1 tsp fresh thyme (optional)

Steps

  1. Pat pork chops dry and season generously with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Sear pork chops for 3-5 minutes per side, until golden brown and cooked through (internal temperature of 145°F). Remove chops from skillet and set aside on a plate, tented with foil.
  3. Reduce heat to medium. Add butter to the skillet. Once melted, add sliced onion and cook for 5-7 minutes, stirring occasionally, until softened.
  4. Add sliced apples to the skillet with the onions and cook for another 5-7 minutes, until apples are tender and slightly caramelized. Stir in apple cider vinegar and fresh thyme (if using), scraping up any browned bits from the bottom of the pan.
  5. Return pork chops to the skillet and toss gently with the apple and onion mixture to warm through. Serve immediately.
