  • 1½ lb salmon fillets, skin-on

  • ½ tsp black pepper
  • 1 lemon (optional)
  • 2 tbsp fresh parsley, chopped (optional)

Steps

  1. Pat salmon fillets very dry with paper towels. Season generously with salt and pepper on both sides.
  2. Heat olive oil in a large non-stick or cast-iron skillet over medium-high heat until shimmering.
  3. Place salmon fillets skin-side down in the hot skillet. Cook for 4-6 minutes, pressing gently with a spatula occasionally to ensure even contact with the pan, until the skin is crispy and golden brown.
  4. Flip the salmon and cook for another 3-5 minutes, or until the salmon is cooked through and flakes easily with a fork. Cooking time will vary based on thickness.
