Pancakes with Sausage and Eggs

Ingredients
- 1½ cup all-purpose flour
- 2 tbsp granulated sugar
- 1 tbsp baking powder
- ½ tsp salt
- 1¼ cup milk
- 2 large eggs
- 3 tbsp unsalted butter, melted
- 8 pork breakfast sausage links
- 4 large eggs
- 1 tbsp vegetable oil
- ½ cup maple syrup (optional)
Steps
- In a large bowl, whisk together flour, sugar, baking powder, and salt for the pancakes.
- In a separate bowl, whisk milk, 2 eggs, and melted butter. Pour wet ingredients into dry ingredients and mix until just combined (a few lumps are okay).
- Heat a lightly oiled griddle or large non-stick skillet over medium heat. Pour 1/4 cup of batter per pancake, cooking until bubbles form on the surface, then flip and cook until golden brown.
- While pancakes cook, brown the sausage links in a separate skillet over medium heat until cooked through. Remove and keep warm.
- In the same skillet or a third one, add a little oil if needed. Crack the remaining 4 eggs and cook to your desired doneness (e.g., sunny-side up, scrambled).
- Serve pancakes immediately with sausage and eggs. Drizzle with maple syrup if desired.
