Ingredients

  • 1½ lb ground beef, 80/20
  • 8 slice rye bread
  • 8 slice Swiss cheese
  • 2 medium yellow onion
  • 4 tbsp butter
  • 4 tbsp mayonnaise (optional)
  • ½ tsp salt
  • ¼ tsp black pepper

Steps

  1. Form the ground beef into four oval patties, slightly larger than your bread slices, and season generously with salt and pepper.
  2. Slice the onions thinly. In a large skillet, melt 2 tablespoons of butter over medium heat. Add the onions and cook, stirring occasionally, until deeply caramelized and soft, about 15-20 minutes. Remove onions from skillet and set aside.
  3. In the same skillet, increase heat to medium-high. Cook the beef patties for 3-4 minutes per side, or until desired doneness. Remove patties from skillet.
  4. Spread mayonnaise (if using) on one side of each slice of rye bread. Assemble the sandwiches by placing a slice of bread (mayo-side out), a slice of Swiss cheese, a beef patty, a portion of caramelized onions, another slice of Swiss cheese, and finally, another slice of bread (mayo-side out).
  5. Melt the remaining 2 tablespoons of butter in the skillet over medium heat. Place the assembled sandwiches in the skillet and grill for 3-5 minutes per side, or until the bread is golden brown and the cheese is melted and gooey.
  6. Cut sandwiches in half and serve immediately.
