Ingredients

  • 1½ lb tilapia fillets
  • 1 cup pecans
  • ½ cup all-purpose flour
  • 2 egg
  • 2 tbsp Dijon mustard
  • 2 tbsp butter
  • 1 lemon
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp fresh parsley (optional)

Steps

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Finely chop the pecans. In a shallow dish, combine the chopped pecans, flour, salt, and pepper.
  3. In another shallow dish, whisk the eggs with Dijon mustard.
  4. Dip each tilapia fillet first into the egg mixture, then dredge in the pecan mixture, pressing to coat well.
  5. Melt butter and drizzle over the crusted fillets on the prepared baking sheet.
  6. Bake for 12-15 minutes, or until the fish is flaky and the crust is golden brown.
  7. Garnish with fresh lemon wedges and chopped parsley, if desired, before serving.
