Porcupine Meatballs
These classic porcupine meatballs feature savory beef and rice simmered in a rich tomato sauce for a comforting family meal.
Ingredients
- 1 lb ground beef, 80/20
- ½ cup uncooked long-grain white rice
- ½ cup onion, finely chopped
- 1 egg
- ½ tsp garlic powder
- ¾ tsp salt
- ¼ tsp black pepper
- 15 oz canned crushed tomatoes
- 1½ cup water
- 1 tbsp Worcestershire sauce
- 1 tbsp brown sugar (optional)
- 2 tbsp fresh parsley, chopped (optional)
Steps
- In a large bowl, combine ground beef, uncooked rice, chopped onion, egg, garlic powder, 0.5 tsp salt, and pepper. Mix gently until just combined, then form into 1.5-inch meatballs.
- In a large skillet or Dutch oven, combine crushed tomatoes, water, Worcestershire sauce, remaining 0.25 tsp salt, and brown sugar (if using). Bring the sauce to a simmer over medium heat.
- Carefully place the meatballs into the simmering sauce. Reduce heat to low, cover, and simmer for 35-40 minutes, or until rice is tender and meatballs are cooked through.
- Stir gently occasionally to prevent sticking. If the sauce becomes too thick, add a splash more water.
- Serve hot, garnished with fresh parsley if desired.
