Pork Loin Roast
A classic pork loin roast, seasoned simply and roasted to tender perfection, ideal for a comforting family meal.
Ingredients
- 2½ lb boneless pork loin roast
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp dried thyme
- 1½ tsp salt
- ¾ tsp black pepper
- 1 lb carrots (optional)
- 1½ lb potatoes (optional)
Steps
- Preheat oven to 375°F (190°C). Pat the pork loin dry with paper towels.
- In a small bowl, combine olive oil, garlic powder, onion powder, thyme, salt, and pepper to make a rub. Generously coat the entire pork loin with the rub.
- Place the pork loin in a roasting pan. If using, chop carrots and potatoes into 1-inch pieces and scatter them around the pork in the pan.
- Roast for 60-75 minutes, or until the internal temperature of the pork reaches 145°F (63°C) with a meat thermometer.
- Remove the pork from the oven, tent loosely with foil, and let it rest for 10-15 minutes before slicing. This allows the juices to redistribute for a more tender roast.
- Slice the pork loin into medallions and serve with roasted vegetables, if prepared.
