Pretzel Crusted Chicken

Ingredients
- 1½ lb boneless, skinless chicken breasts
- 2 cup pretzels, crushed
- ½ cup all-purpose flour
- 2 large eggs
- 1 tbsp Dijon mustard
- 1 tsp garlic powder
- ½ tsp onion powder
- ½ tsp paprika
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp cooking spray or olive oil (optional)
Steps
- Preheat oven to 400°F (200°C). Lightly grease a baking sheet or line with parchment paper.
- Pound chicken breasts to an even 1/2-inch thickness. In a shallow dish, combine crushed pretzels, garlic powder, onion powder, paprika, salt, and pepper.
- In a second shallow dish, whisk together flour. In a third shallow dish, whisk eggs with Dijon mustard.
- Dredge each chicken breast first in flour, shaking off excess, then dip into egg mixture, and finally press firmly into the pretzel mixture to coat completely.
- Place coated chicken on the prepared baking sheet. Lightly spray or drizzle the tops of the chicken with cooking spray or olive oil for extra crispiness.
- Bake for 20-25 minutes, or until chicken is cooked through and the internal temperature reaches 165°F (74°C) and the crust is golden brown and crispy.
- Let rest for a few minutes before serving.
