Pulled Pork Sandwich

Ingredients

  • 2½ lb pork shoulder (Boston butt)
  • 1 onion
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tbsp brown sugar
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ cup apple cider vinegar
  • ½ cup chicken broth
  • 1 cup BBQ sauce
  • 4 hamburger buns
  • 2 cup coleslaw (optional)

Steps

  1. Pat the pork shoulder dry and rub with a mixture of garlic powder, paprika, brown sugar, salt, and black pepper.
  2. Place the sliced onion at the bottom of a slow cooker. Add the seasoned pork shoulder, then pour in the apple cider vinegar and chicken broth.
  3. Cook on low for 6-8 hours or on high for 3-4 hours, until the pork is very tender and easily shreds with a fork.
  4. Carefully remove the pork from the slow cooker and shred it using two forks. Discard any excess fat.
  5. Return the shredded pork to the slow cooker with about 1/2 cup of the cooking liquid and stir in the BBQ sauce.
  6. Serve the pulled pork warm on hamburger buns, optionally topped with coleslaw.
