Reuben Casserole
Enjoy all the classic flavors of a Reuben sandwich in a comforting, easy-to-make casserole.
Ingredients
- 12 oz corned beef
- 16 oz sauerkraut
- 8 oz Swiss cheese
- 4 slice rye bread
- ¾ cup Thousand Island dressing
- 2 tbsp butter
- ½ tsp caraway seeds (optional)
Steps
- Preheat oven to 375 0F (190 0C). Lightly grease a 9x13 inch baking dish.
- Drain sauerkraut well, pressing out excess liquid. Dice the corned beef into small pieces. Shred or slice the Swiss cheese.
- In a large bowl, combine the diced corned beef, drained sauerkraut, half of the Swiss cheese, and Thousand Island dressing. Mix well.
- Spread the mixture evenly into the prepared baking dish. Top with the remaining Swiss cheese.
- Cut the rye bread slices into small cubes. In a small bowl, toss the bread cubes with melted butter and caraway seeds (if using). Sprinkle over the casserole.
- Bake for 25-30 minutes, or until the casserole is bubbly and the bread topping is golden brown and crispy.
- Let stand for 5 minutes before serving.
