Salmon Avocado Salad

A refreshing and healthy salad featuring pan-seared salmon, creamy avocado, crisp cucumber, and fresh spinach, all tossed in a zesty lime-mint dressing.

Ingredients

  • 1 lb salmon fillets
  • 3 avocado
  • 1 cucumber
  • 14 oz spinach
  • 4 tbsp fresh mint
  • 1 lime
  • 2 tsp honey
  • 3 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper

Steps

  1. Season salmon fillets with salt and pepper, then rub with 1 tablespoon of olive oil.
  2. In a small bowl, whisk together the remaining 2 tablespoons of olive oil, lime zest and juice, honey, and chopped mint to create the dressing.
  3. Halve, stone, peel, and slice the avocados. Halve and quarter the cucumber lengthways, then cut into slices.
  4. Divide spinach, avocado, and cucumber among four plates. Drizzle half of the dressing over the salads.
  5. Heat a non-stick pan over medium-high heat. Add the salmon and cook for 3-4 minutes per side, until crisp and cooked through.
  6. Place a salmon fillet on top of each salad. Drizzle the remaining dressing over the salmon and salad. Serve warm.
