Salmon Avocado Salad
A refreshing and healthy salad featuring pan-seared salmon, creamy avocado, crisp cucumber, and fresh spinach, all tossed in a zesty lime-mint dressing.
Ingredients
- 1 lb salmon fillets
- 3 avocado
- 1 cucumber
- 14 oz spinach
- 4 tbsp fresh mint
- 1 lime
- 2 tsp honey
- 3 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
Steps
- Season salmon fillets with salt and pepper, then rub with 1 tablespoon of olive oil.
- In a small bowl, whisk together the remaining 2 tablespoons of olive oil, lime zest and juice, honey, and chopped mint to create the dressing.
- Halve, stone, peel, and slice the avocados. Halve and quarter the cucumber lengthways, then cut into slices.
- Divide spinach, avocado, and cucumber among four plates. Drizzle half of the dressing over the salads.
- Heat a non-stick pan over medium-high heat. Add the salmon and cook for 3-4 minutes per side, until crisp and cooked through.
- Place a salmon fillet on top of each salad. Drizzle the remaining dressing over the salmon and salad. Serve warm.
