Salmon Poke Bowl

Ingredients
- 1¼ lb sushi-grade salmon fillet
- 3 cup cooked sushi rice
- ½ cup soy sauce
- 2 tbsp sesame oil
- 2 tbsp rice vinegar
- 1 tbsp sriracha (optional)
- 4 stalks green onions
- 1 cucumber
- 2 avocado
- 1 cup edamame, shelled
- 1 tbsp sesame seeds (optional)
- 1 pack seaweed snacks (optional)
Steps
- Dice the sushi-grade salmon into 1/2-inch cubes.
- In a medium bowl, whisk together soy sauce, sesame oil, rice vinegar, and sriracha (if using) to create the poke sauce.
- Add the diced salmon and sliced green onions to the poke sauce, tossing gently to coat. Let marinate for 10-15 minutes.
- While salmon marinates, slice the cucumber and avocado.
- Divide the cooked sushi rice among four bowls.
- Arrange the marinated salmon over the rice in each bowl, then add cucumber slices, avocado slices, and edamame.
- Garnish with sesame seeds and serve immediately, optionally with seaweed snacks on the side.
