Ingredients

  • 1 lb cooked shrimp, peeled and deveined
  • 2 cup sushi rice
  • 2½ cup water
  • 1 cucumber
  • 2 avocado
  • 1 cup edamame, shelled
  • 4 radishes
  • ½ cup soy sauce
  • 2 tbsp sesame oil
  • 2 tbsp rice vinegar
  • 1 tbsp fresh ginger, grated
  • 2 clove garlic, minced
  • 1 tsp sriracha (optional)
  • 2 green onions, sliced (optional)
  • 1 tbsp sesame seeds (optional)

Steps

  1. Cook sushi rice according to package instructions. Let cool slightly.
  2. While rice cooks, prepare the dressing: In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, grated ginger, minced garlic, and sriracha (if using).
  3. Chop the cucumber and radishes into thin slices or small cubes. Dice the avocado.
  4. In a large bowl, combine the cooked shrimp with half of the prepared dressing. Toss gently to coat.
  5. Assemble the bowls: Divide the cooked rice among four bowls. Arrange the dressed shrimp, cucumber, avocado, edamame, and radishes over the rice.
  6. Drizzle the remaining dressing over each bowl. Garnish with sliced green onions and sesame seeds, if desired, before serving.
