Shrimp Poke Bowl
A refreshing and vibrant poke bowl featuring succulent shrimp, fresh vegetables, and a savory sesame soy dressing over fluffy rice.
Ingredients
- 1 lb cooked shrimp, peeled and deveined
- 2 cup sushi rice
- 2½ cup water
- 1 cucumber
- 2 avocado
- 1 cup edamame, shelled
- 4 radishes
- ½ cup soy sauce
- 2 tbsp sesame oil
- 2 tbsp rice vinegar
- 1 tbsp fresh ginger, grated
- 2 clove garlic, minced
- 1 tsp sriracha (optional)
- 2 green onions, sliced (optional)
- 1 tbsp sesame seeds (optional)
Steps
- Cook sushi rice according to package instructions. Let cool slightly.
- While rice cooks, prepare the dressing: In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, grated ginger, minced garlic, and sriracha (if using).
- Chop the cucumber and radishes into thin slices or small cubes. Dice the avocado.
- In a large bowl, combine the cooked shrimp with half of the prepared dressing. Toss gently to coat.
- Assemble the bowls: Divide the cooked rice among four bowls. Arrange the dressed shrimp, cucumber, avocado, edamame, and radishes over the rice.
- Drizzle the remaining dressing over each bowl. Garnish with sliced green onions and sesame seeds, if desired, before serving.
