Tofu Poke Bowl
A fresh and vibrant Hawaiian-inspired bowl featuring marinated tofu, crisp vegetables, and a savory sauce over sushi rice.
Ingredients
- 16 oz firm tofu
- 2 cup sushi rice
- 1 cucumber
- 2 avocado
- 1 cup edamame, shelled
- 3 scallions
- ½ cup soy sauce
- 2 tbsp sesame oil
- 2 tbsp rice vinegar
- 1 tbsp grated ginger
- 1 tsp sriracha (optional)
- 1 tbsp sesame seeds (optional)
Steps
- Press the tofu to remove excess water, then cut into 1/2-inch cubes.
- In a medium bowl, whisk together soy sauce, sesame oil, rice vinegar, grated ginger, and sriracha (if using). Add tofu cubes and toss gently to coat; let marinate for at least 15 minutes.
- Cook sushi rice according to package directions. While rice cooks, dice cucumber and avocado, and thinly slice scallions.
- Divide cooked sushi rice among four bowls. Top each with marinated tofu, cucumber, avocado, edamame, and scallions.
- Garnish with sesame seeds if desired and serve immediately.
