Tofu Poke Bowl

Ingredients

  • 16 oz firm tofu
  • 2 cup sushi rice
  • 1 cucumber
  • 2 avocado
  • 1 cup edamame, shelled
  • 3 scallions
  • ½ cup soy sauce
  • 2 tbsp sesame oil
  • 2 tbsp rice vinegar
  • 1 tbsp grated ginger
  • 1 tsp sriracha (optional)
  • 1 tbsp sesame seeds (optional)

Steps

  1. Press the tofu to remove excess water, then cut into 1/2-inch cubes.
  2. In a medium bowl, whisk together soy sauce, sesame oil, rice vinegar, grated ginger, and sriracha (if using). Add tofu cubes and toss gently to coat; let marinate for at least 15 minutes.
  3. Cook sushi rice according to package directions. While rice cooks, dice cucumber and avocado, and thinly slice scallions.
  4. Divide cooked sushi rice among four bowls. Top each with marinated tofu, cucumber, avocado, edamame, and scallions.
  5. Garnish with sesame seeds if desired and serve immediately.
