Salmon Salad with Mixed Greens

Ingredients

  • 1½ lb salmon fillets
  • 8 oz mixed greens
  • 1 pint cherry tomatoes
  • 1 cucumber
  • ½ red onion
  • ¼ cup extra virgin olive oil
  • 3 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp fresh dill (optional)

Steps

  1. Pat salmon fillets dry and season with salt and pepper.
  2. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Cook salmon for 4-6 minutes per side, or until cooked through and easily flakes with a fork. Let cool slightly, then flake into bite-sized pieces.
  3. While salmon cooks, prepare the vinaigrette: whisk together remaining olive oil, apple cider vinegar, Dijon mustard, salt, and pepper in a small bowl.
  4. Halve cherry tomatoes, slice cucumber, and thinly slice red onion.
  5. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, and red onion.
  6. Add flaked salmon to the salad. Drizzle with vinaigrette and toss gently to combine. Garnish with fresh dill if desired and serve immediately.
