Salmon Salad with Mixed Greens
A light and refreshing salad featuring flaky salmon, crisp mixed greens, and a simple vinaigrette.
Ingredients
- 1½ lb salmon fillets
- 8 oz mixed greens
- 1 pint cherry tomatoes
- 1 cucumber
- ½ red onion
- ¼ cup extra virgin olive oil
- 3 tbsp apple cider vinegar
- 1 tsp Dijon mustard
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp fresh dill (optional)
Steps
- Pat salmon fillets dry and season with salt and pepper.
- Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Cook salmon for 4-6 minutes per side, or until cooked through and easily flakes with a fork. Let cool slightly, then flake into bite-sized pieces.
- While salmon cooks, prepare the vinaigrette: whisk together remaining olive oil, apple cider vinegar, Dijon mustard, salt, and pepper in a small bowl.
- Halve cherry tomatoes, slice cucumber, and thinly slice red onion.
- In a large bowl, combine mixed greens, cherry tomatoes, cucumber, and red onion.
- Add flaked salmon to the salad. Drizzle with vinaigrette and toss gently to combine. Garnish with fresh dill if desired and serve immediately.
