Sheet Pan Pork Tenderloin with Asparagus
Enjoy a healthy and flavorful meal with minimal cleanup by roasting pork tenderloin and asparagus together on a single sheet pan.
Ingredients
- 1½ lb pork tenderloin
- 1½ lb asparagus
- 3 tbsp olive oil
- 1 tsp garlic powder
- ½ tsp onion powder
- ½ tsp paprika
- ½ tsp dried thyme
- ¾ tsp salt
- ½ tsp black pepper
- ½ lemon (optional)
- 2 tbsp fresh parsley (optional)
Steps
- Preheat oven to 400°F (200°C). Line a large sheet pan with parchment paper.
- Trim the woody ends off the asparagus. In a small bowl, combine olive oil, garlic powder, onion powder, paprika, thyme, salt, and pepper.
- Pat the pork tenderloin dry and rub half of the seasoning mixture all over it. Place the seasoned pork on one side of the prepared sheet pan.
- Toss the asparagus with the remaining seasoning mixture and arrange it on the other side of the sheet pan.
- Roast for 15-20 minutes, or until the internal temperature of the pork reaches 145°F (63°C). The asparagus should be tender-crisp.
- Remove from oven, tent the pork with foil, and let it rest for 5 minutes before slicing. If desired, squeeze fresh lemon juice over the pork and asparagus and garnish with chopped fresh parsley before serving.
