Sheet Pan Salmon and Asparagus
Enjoy a healthy and flavorful meal with minimal cleanup, featuring tender salmon and crisp asparagus roasted together on one pan.
Ingredients
- 1½ lb salmon fillets
- 1½ lb asparagus
- 1 lemon
- 3 tbsp olive oil
- 1 tsp garlic powder
- ½ tsp dried dill (optional)
- ½ tsp salt
- ¼ tsp black pepper
Steps
- Preheat oven to 400°F (200°C). Line a large sheet pan with parchment paper.
- Trim the woody ends off the asparagus. In a bowl, toss asparagus with 1 tablespoon olive oil, half of the garlic powder, salt, and pepper.
- Place the asparagus on one side of the prepared sheet pan.
- Pat salmon fillets dry. Drizzle with remaining 2 tablespoons olive oil, remaining garlic powder, salt, pepper, and dried dill (if using). Slice the lemon into thin rounds.
- Arrange salmon fillets on the other side of the sheet pan with the asparagus. Top each salmon fillet with a lemon slice.
- Roast for 12-18 minutes, or until salmon is cooked through and flakes easily with a fork, and asparagus is tender-crisp. Cooking time will vary based on salmon thickness.
- Serve immediately, with extra lemon wedges if desired.
