Sheet Pan Salmon and Asparagus

Ingredients

  • 1½ lb salmon fillets
  • 1½ lb asparagus
  • 1 lemon
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • ½ tsp dried dill (optional)
  • ½ tsp salt
  • ¼ tsp black pepper

Steps

  1. Preheat oven to 400°F (200°C). Line a large sheet pan with parchment paper.
  2. Trim the woody ends off the asparagus. In a bowl, toss asparagus with 1 tablespoon olive oil, half of the garlic powder, salt, and pepper.
  3. Place the asparagus on one side of the prepared sheet pan.
  4. Pat salmon fillets dry. Drizzle with remaining 2 tablespoons olive oil, remaining garlic powder, salt, pepper, and dried dill (if using). Slice the lemon into thin rounds.
  5. Arrange salmon fillets on the other side of the sheet pan with the asparagus. Top each salmon fillet with a lemon slice.
  6. Roast for 12-18 minutes, or until salmon is cooked through and flakes easily with a fork, and asparagus is tender-crisp. Cooking time will vary based on salmon thickness.
  7. Serve immediately, with extra lemon wedges if desired.
