Ingredients

  • 1½ lb Italian sausage
  • 3 bell peppers
  • 1 yellow onion
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • ½ tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp fresh parsley (optional)

Steps

  1. Preheat oven to 400°F (200°C). Line a large sheet pan with parchment paper for easy cleanup.
  2. Slice the bell peppers and onion into 1/2-inch strips. Cut the Italian sausage into 1-inch pieces.
  3. On the prepared sheet pan, combine the sausage, bell peppers, and onion. Drizzle with olive oil and sprinkle with garlic powder, oregano, salt, and black pepper. Toss to coat everything evenly.
  4. Spread the ingredients in a single layer on the sheet pan.
  5. Roast for 20-25 minutes, stirring halfway through, until the sausage is cooked through and the vegetables are tender and slightly caramelized.
  6. Remove from oven. Garnish with fresh parsley, if desired, and serve immediately.
