Ingredients

  • 1½ lb large shrimp, peeled and deveined
  • 12 oz smoked sausage (Andouille or Kielbasa), sliced
  • 1½ lb baby red potatoes, halved or quartered
  • 2 corn on the cob, cut into 1-inch pieces
  • 3 tbsp olive oil
  • 2 tbsp Old Bay seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 lemon wedges (optional)
  • 2 tbsp fresh parsley, chopped (optional)
  • ¼ cup melted butter (optional)

Steps

  1. Preheat oven to 400°F (200°C). Line a large sheet pan with parchment paper.
  2. In a large bowl, toss the halved potatoes with 1 tablespoon of olive oil, 1 tablespoon of Old Bay seasoning, garlic powder, onion powder, salt, and pepper. Spread potatoes in a single layer on the prepared sheet pan.
  3. Roast the potatoes for 15 minutes. While potatoes roast, cut corn into 1-inch pieces and slice sausage.
  4. Remove sheet pan from oven. Add corn and sausage to the pan with the potatoes. Drizzle with remaining 1 tablespoon of olive oil and sprinkle with 1/2 tablespoon of Old Bay seasoning. Toss gently to combine.
  5. Return to oven and roast for another 10 minutes.
  6. In the same large bowl, toss the shrimp with the remaining 1 tablespoon of olive oil and 1/2 tablespoon of Old Bay seasoning. Add shrimp to the sheet pan.
  7. Roast for an additional 8-10 minutes, or until shrimp are pink and cooked through.
  8. Serve immediately with lemon wedges, chopped parsley, and melted butter for dipping, if desired.
