Ingredients

  • 1½ lb large shrimp, peeled and deveined
  • 1 cup all-purpose flour
  • ½ cup cornmeal
  • 2 tsp Cajun seasoning
  • 1 tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 eggs
  • 2 tbsp milk
  • 4 cup vegetable oil
  • 4 French bread or sub rolls
  • 2 cup romaine lettuce, shredded
  • 2 ripe tomatoes, sliced
  • ½ cup dill pickles, sliced
  • ½ cup mayonnaise
  • 1 tsp hot sauce (optional)

Steps

  1. In a shallow dish, combine flour, cornmeal, Cajun seasoning, paprika, salt, and pepper. In another shallow dish, whisk eggs and milk.
  2. Dip shrimp first into the egg mixture, then dredge in the flour mixture, ensuring it's fully coated. Set aside.
  3. Heat vegetable oil in a large deep skillet or Dutch oven to 350°F (175°C).
  4. Fry shrimp in batches for 2-3 minutes per side, or until golden brown and cooked through. Remove with a slotted spoon and drain on paper towels.
  5. Slice French bread or sub rolls lengthwise, but not all the way through. Lightly toast the rolls if desired.
  6. Spread mayonnaise on both sides of the rolls. For extra flavor, mix a dash of hot sauce into the mayonnaise.
  7. Fill each roll with shredded lettuce, sliced tomatoes, dill pickles, and a generous portion of the fried shrimp.
  8. Serve immediately and enjoy your classic Shrimp Po Boy.
