Ingredients

  • 1 lb ground beef
  • 1 medium yellow onion
  • 3 cloves garlic
  • 28 oz canned diced tomatoes
  • 15 oz canned kidney beans
  • 15 oz canned pinto beans
  • 1 cup beef broth
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 tsp paprika
  • ½ tsp oregano
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ cup shredded cheddar cheese (optional)
  • ¼ cup sour cream (optional)
  • 2 tbsp fresh cilantro (optional)

Steps

  1. Brown the ground beef in a skillet over medium-high heat, breaking it apart as it cooks. Drain any excess grease.
  2. Dice the onion and mince the garlic. Add the browned beef, diced onion, and minced garlic to the slow cooker.
  3. Drain and rinse the kidney and pinto beans. Add the diced tomatoes (undrained), rinsed beans, beef broth, chili powder, cumin, paprika, oregano, salt, and pepper to the slow cooker.
  4. Stir all ingredients well to combine.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chili is hot and flavors are melded.
  6. Serve hot, garnished with shredded cheddar cheese, a dollop of sour cream, and fresh cilantro, if desired.
