Slow Cooker Chili
A hearty and comforting slow cooker chili, packed with ground beef, beans, and classic spices, perfect for a cozy meal.
Ingredients
- 1 lb ground beef
- 1 medium yellow onion
- 3 cloves garlic
- 28 oz canned diced tomatoes
- 15 oz canned kidney beans
- 15 oz canned pinto beans
- 1 cup beef broth
- 2 tbsp chili powder
- 1 tbsp cumin
- 1 tsp paprika
- ½ tsp oregano
- 1 tsp salt
- ½ tsp black pepper
- ½ cup shredded cheddar cheese (optional)
- ¼ cup sour cream (optional)
- 2 tbsp fresh cilantro (optional)
Steps
- Brown the ground beef in a skillet over medium-high heat, breaking it apart as it cooks. Drain any excess grease.
- Dice the onion and mince the garlic. Add the browned beef, diced onion, and minced garlic to the slow cooker.
- Drain and rinse the kidney and pinto beans. Add the diced tomatoes (undrained), rinsed beans, beef broth, chili powder, cumin, paprika, oregano, salt, and pepper to the slow cooker.
- Stir all ingredients well to combine.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chili is hot and flavors are melded.
- Serve hot, garnished with shredded cheddar cheese, a dollop of sour cream, and fresh cilantro, if desired.
